Menu Plan Monday 6/10



Monday- Basil Parmesan Chicken with pesto pasta
Tuesday- Raspberry Balsamic Chicken with simple fried rice
Wednesday- Buffalo Chicken Wraps with mac and cheese
Thursday- Tacos with saffron rice
Friday- Steak!!! 
Saturday- Leftovers/Dinosaur Nuggets and smiles
Sunday- Omaha Burger and BLT/Olive Oil Pasta with pan fried zuchinni and garlic knots

Three days of chicken in a row might be moved around but I started writing down what we had in the freezer and I was filling in the blank with what was left- more chicken.  It is a good problem to have but I can get chicken cheaper per pound than ground beef so I haven't gotten any ground beef in awhile so I am trying to stretch it through the month. 

Friday is supposed to be steak because my sister in law is going to bring them.  I just need to come up with the rest of the dinner to go with it.  I am thinking homemade mac and cheese and a new biscuit recipe that I found recently.  Stay tuned and see what I make!!

Hoping to make more progress in the cleaning out the freezer project.  I don't know if I mentioned it but when I took a quick inventory of the freezer, I found that I have around 19 bags of chicken broth.  Yup!!  I was putting them in plastic bags which hasn't worked out the best and I am going to switch to mason jars but I have 19 bags so I am going to have to figure out a few recipes to make with my chicken broth or it might take up the whole upstairs freezer when I am going to defrost the basement.  They take up the back of one whole shelf already so I guess we will see what I can use.  I don't have any more whole chickens to fill back up the broth so I want to make sure I save a little :)

  1. I am also trying to use up chicken. My grocery budget is also 160 per month and I love seeing what meals you are able to create with this amount. It is so true that ground beef can be a budget buster. Thank you for posting your shopping trips and menu plans. I love the inspiration.

    1. I am so glad that my plans help you to figure out what you can do for your family. It is always good to share ideas because moving to a limited budget makes it harder to figure out what special things that you can make and still fit in the budget. I made a new recipe last night and destroyed the kitchen. It turned out really well even if the clean up was a mess. Stay tuned for the recipe using spaghetti noodles and leftover chicken to make spicy peanut noodles for a super cheap and tasty meal :)
