Menu Plan Monday 10/31
Monday- Chicken fries, Buffalo Chicken and homemade fries
Tuesday- Roast Chicken
Wednesday- Pasta with garlic bread and sausage
Thursday- Salsa Sloppy Joes
Friday- Lasagna
Saturday- Paninis with leftovers
Sunday-Waffles and hash browns with eggs
Last week was totally changed yet again because we ended up with leftovers on Tuesday and changed Wednesday to the Spicy Honey Mustard Chicken that we didn't have last week. We moved the pasta meal to Thursday and ended up with Leftovers and Salad on Friday after a long week. We went with the Chicken and Rice Casserole that we were supposed to have on Thursday to Saturday so I guess things were just moved back until I had the energy to make them!!! We made it through mostly in one piece. Hoping for a less busy week this week but I don't think that it is in my to have a slow week!!! AHHH!!!
I really need to learn to say NO!! I signed up to do a bunch of things last week like the book fair at my son's school and things that had me out of the house all day. It is hard to catch up but I have plans to get lots of ground beef cooked tonight when making tacos to get some other meals ready and in the freezer for the coming weeks but I also committed to going to a Halloween Party for my son and then I have to go to work after so I have a window in between to get this massive cooking prep done. I may have over scheduled again!!!

You sound really busy! I hope you manage to get your meal prep done without any difficulties. I used to make two different main dishes on a Sunday and alternate between the two during the week! My daughter was usually fine with it and there was always cereal or a peanut butter sandwich if she wanted something else.
ReplyDeleteI haven't decided what to make this week, but I want to eat from the freezer and pantry as much as possible.
I got half of the ground beef in the freezer and the other half cooked. We ate tacos for dinner that night. I threw part of the ground beef in a container and in the freezer for french dip sloppy joes. The next day I made up a double batch of salsa sloppy joes one for the freezer and one for this week!! Super excited and I even blended fire roasted tomatoes, jalapenos, garlic and onions to make my own "salsa" for the sauce so that I didn't have to use the salsa from the fridge!! I think that I had a lot of successes. It is always best to eat from the freezer and pantry!! Hope you have a great week!
DeleteAlison, you can't keep saying yes to everything if at the same time not being able to accomplish what you want to do at home is driving you crazy. I think you thrive on being on the go-go-go all the time, but something's gotta give, you know? I hope you can find the right balance for you :)
ReplyDeleteTrying to hold down three part time jobs is a tough business!! I love contributing to the family in all the ways that I can but it is exhausting to work 6 days a week even if not the whole day. I should probably stop reading to get some extra sleep :) I pick up the hours for my second two jobs when I can because it does help but the one short term one is ending next week so who knows what the future will bring. I get home at different times every day but I usually have a few hours to get things ready for dinner before picking up my son from school but it always goes quickly. Today I made salsa sloppy joes for dinner later in the week and freezer, ate lunch, cut coupons, cut french fries for dinner and emptied the dishwasher. I still needed to fold the laundry and wash the dishes but I feel like that it is a lot for two hours but there are always other things to do!! Here is hoping that I can get it all done with a few less hours at work!
