Wednesday- French Dip Sloppy Joes with mac and cheese
Thursday- Lime Chicken with white rice
Friday- Leftovers
Saturday- ??
Sunday- ??
Planning meals is so hard in the summer. Our plans are all over the place and it seems that when I think that we are going to be home, we never are. We have also had company in and out for the month so planning around that is also hard. We are supposed to have family coming into town this week again so more confusion over the meal plan and how many people I need to plan for or whether they are coming. Here is my best guess at the plan for the week with three bags of ground beef, three bags of chicken, one bag of cubed chicken

I haven't made a menu for a couple of months now but I did make one for this week. I was feeling too guilty about the eating out and flying by the seat of my pants every day. It's nothing exciting and we may still end up eating out but at least I have a plan to fall back on!
ReplyDeleteGood luck with your visitors. It is hard to plan when you don't know how many people will be there or not. When my 2 oldest boys were in band/ROTC and my daughter in volleyball, I always had to ask the night before who was going to be home for dinner or not otherwise I'd have cooked for 6 but only 3 of us would have been home on some nights!
When I fly by the seat of my pant, it usually ends up with me giving up around dinner time because I have lost all energy so I know that I can't do it anymore even with visitors...although I don't think that we are going to have any this week. I never know what time we are going to have dinner or how many people are going to be here so it often turns out with me rushing and getting all gross and sweaty before dinner which is never nice to eat dinner when you are overheated. I am trying to get my act together this week and start August off right but who knows if that will happen :) To many variables in the summer!!!
DeleteYum! We haven't had pasta with garlic bread in a while and that sounds tasty. What recipe do you use to make your French Dip sandwiches? I love them but have never made them at home, actually.
ReplyDeleteI have made french dip sandwiches with roast beef from the meat counter but I don't enjoy those as much as the french dip sloppy joe recipe that I found. It is really good because you can cook the meat ahead and heat it up in the sauce in a sauce pan so that you don't have to do too much when it is time for dinner. DeleteWe enjoy it and I actually now like it a little more zippy so I add 2 tbsp of steak sauce and worchestershire!! It is so easy to change up and make it exactly like your family likes with onions, peppers, cheese or just the meat with sauce!! Great to work with whatever we have on hand!!
DeleteOh, I meant to also say that since it's only the two of us, I've started planning to cook only two or three times each week. We don't run into the problem of too much leftover that way. Although I think that wouldn't really work with guests!
ReplyDeleteVery true!!! Cooking and planning for leftovers is the best. If you cook a chicken one night then another night have chicken in another meal like fried rice, quesdillas or chicken tacos. I have been very good at trying to plan those things in the winter but some how it escapes me more in the summer! Maybe we eat everything so there aren't leftovers!!!
