Menu Plan Monday 4/11


Monday- Chicken Panini Sandwiches
Tuesday- Pasta
Wednesday- Citrus Herb Chicken Wraps with saffron rice
Thursday- Chicken fries, popcorn chicken and homemade fries
Friday- Stir Fry Chicken with Noodles and egg rolls
Saturday- ??
Sunday- ??

Do you have certain days that you have specific types of meals?  I don't normally have that but the weeks are very much the same thing going on each week so it has turned into that a little.  I need something easier on Monday because it is the night the homework for the week comes home so even though that is for my son, it needs a lot of input from me so I have to be able to go back and forth to the table to keep him making progress.  Tuesday is our busy night where we don't have a lot of time to sit down to dinner so quick meal that gets on the table quickly.  Wednesday is a middle of the week and usually the day we stay late on the playground so my husband starts dinner.  Thursday is the night that I have a little more time to cook while my son is in after school enrichment so we get to eat as soon as he gets home.  Friday we are exhausted and no matter what I plan, it usually ends up being leftovers because I don't want to stand at the stove because my feet hurt.  The weekend is either slow and we don't want to make dinner or too busy and we don't want to make dinner.  And then it starts all over again!!  How do you manage your weekly schedule and get dinner on the table?  I hope that you have a tasty week!!

    This week I remembered to factor in the nights when one or several of us won't be home for dinner, which is 3 nights! I try to schedule easy things to cook on the weekends because I never feel like cooking after I spent a day either being busy with walks/bike rides or events to attend or just sitting outside in the sun all day (which is exhausting as well!).

    The thought of cooking at the end of a day when my feet ache would send me to pick up food from somewhere so kudos to you to have done Leftover Nights instead!

    1. We love chicken and it happens to be the thing that we actually have in the freezer which we haven't in awhile. I am so glad to finally have grilled chicken since we got snow here up until last weekend!!!

      I wasn't sure what I was going to get done for this week but I finally after three more trips to the store got everything that I needed for the darn lasagna. I had the day off on Wednesday so I made two pans. One in the fridge for Friday night and one in the freezer for later in the month. So exciting!! We got to use up some asparagus and pineapple on the grill too so it was super tasty week so far and we haven't even had the lasagna yet!!

      I am exhausted so we are totally getting leftovers sometime over the weekend so that we can get the lasagna again and anything else in the fridge so I don't have to cook!!
