Crispy Salami Salad

I was watching an episode of Rachael Ray and she mentioned that she loved to fry up some crispy salami to put on top of salad to make it extra tasty.  I thought that it sounds brillant because I had some dried out salami in the fridge that we weren't using.  I decided that I was going to make it into a yummy salad.  I put a little oil in the pan to start the cooking process even though there was oil in the pan because Rachael always uses her EVOO (it was not necessary).  I cut up the salami into bite sized pieces.


After they were done and stirred them around so that they were crispy on both sides, I put them on a paper towel to drain.  I mixed up a quick salad with mixed greens, carrots, blueberries, dried cranberries and crumbled blue cheese.  I added the fried crispy salami to the top which looked wonderful and smelled even better.


My husband picked all of the "stuff" off the top of his salad before I even told him what it was because he thought it was bacon (not his favorite).  I asked him if I have ever given him something he didn't like to eat and tried to poison him.  The answer is NO!  I told him what it was and he tried it.  He loved it.  I told him that I wish that we had more lettuce because I wanted more salad after that yummy start.

I took the plates to the kitchen to rinse off and I came back and he had eaten all of the fried salami off the paper towel.  While I was in the kitchen, I was dreaming about how great that would be on a baked potato the next day only to find out that the person who thought it was poison 10 minutes before had done me the favor of finishing off the crispy salami.

If you think that this sounds strange, I promise that it is an amazing tasty treat so try some the next time you are in the mood for salad and you might want it every time!!  I am thinking about trying it with some other meats to see how those go over with my husband!!  Let me know if you have ever had this tasty treat and if I am the only one that never heard of it.
