Beer Can Chicken

I had one whole chicken left and I wanted to try something new and fun with it.  I have been making the Herb Butter Chicken for so long (which is super tasty) but the same thing does get boring.  I am trying to make more of an effort to mix up our dinners with new recipes!!!  I will share my successes and failures.

I had some Weber Seasonings in the cupboard so I decided to make Beer Can chicken.  It was super cold (around 25 degrees when we had to warm up the grill) and we were having a discussion about how long it might take to warm up a grill when it was fighting below freezing temperatures.  We decided that making all the effort to just run out of gas in the middle because it took so long was probably not worth the effort.

So we went on the website and found the recipe that was recommended by Weber Seasonings here.  I also searched for beer can chicken cooked in the oven and found this recipe.

I got out all the ingredients and I started by cleaning the chicken.  I dried it off got ready to follow the instructions.


I measured out the 1/4 cup of seasoning that I needed and it was a little less than half of the container.


I put it in a 9 x 13 casserole dish dish and brushed on the the oil.


I spread the seasoning on the chicken which easily stuck because of the oil.


I spread on both sides and then poured some of the seasoning inside the cavity.  I poured some of the beer in the bottom of the pan and added one tablespoon of the seasoning to the can.  Then I got the chicken on top of the beer can.


I made a little mistake because I should have poured more of the beer into another container.  My husband had to help because I had to take the chicken off of the can to get more hot beer to pour into the pan because the liquid was totally cooked off and the pan was burning.  It made a mess in the pan and it actually ended up cracking my pan because there was no liquid left.  It was not the best end result that I was hoping for but here was the end result.


 Although the chicken did end up looking great!


If you want to make your own, spare yourself the problems with the liquid cooking off and your pan cracking.

Beer Can Chicken

 whole chicken (about 5 pounds)
2 teaspoons  Canola Oil
1/4 cup  Weber Beer Can Chicken Seasoning
1 can  beer
1 tablespoon  Weber Beer Can Chicken Seasoning

Remove and discard the neck, giblets and trim any excess fat from the chicken.  Rinse chicken with cold water and pat dry.  Lightly brush chicken with oil and season, inside and out, with 1/4 cup seasoning.

Open a room temperature beer in a can and pour half of the beer in the bottom of the 9 x 13 casserole dish.  Add 1 tablespoon seasoning to can (it may foam).  Pour the other half in another oven safe container.  Set the beer can in the 9 x 13 casserole dish and slide the chicken over the top so the can fits inside the cavity.


Bake the chicken in the preheated 350 degree oven. Put the container of beer in the oven to keep warm at the same temperature as the pan.  After 45 minutes, pour remaining beer into the pan under the chicken if it is boiled off.  Turn Continue baking until no longer pink at the bone and the juices run clear, about 30-45 additional minutes. The thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F. Remove the chicken from the oven and discard the beer can (use oven mitt because it is hot!!). Allow chicken to rest in a warm area for 10-20 minutes before slicing.
