Amish Egg Noodles

I had saved this recipe for a long time and said that I would get to making it so I made the big jump to try it because I was looking for something easy to make for dinner that might be a little new.  It was easy and I had a bag of egg noodles that my parents bought me from Amish country so I thought that it was calling for this recipe.


I started by melting the butter in the pan.  Do you see those scratches in the bottom of my pan?  I didn't see them until after I took this picture but that makes me sad.


After the butter is melting, cook for a little bit to brown.  Make sure you turn the heat so the butter doesn't burn too quickly.


I added my homemade chicken broth and the chicken bouillon per the recipe.  You could see the butter rise to the surface.


Then, I added the pasta to the pot and it got to have a white slight foam on the top.  Of course you can't see the noodles because they are all under the surface of the liquid.


Put the top on the pot and let it sit for 25 minutes or until the moisture from the chicken broth is absorbed.  The recipe says that  it shouldn't take that longer but I didn't have the same luck.  I am not sure if it was the homemade Amish noodles or the homemade chicken broth but mine didn't absorb.  I would like to blame it on the stove but I don't think that it is the stoves fault.


 After over 25 minutes, my pasta still had a lot of broth.  I tested the pasta and it was done so we decided to use the slotted spoon to get the noodles out.  This is my new Rachael Ray spoon from Christmas so it was a great to get our noodles out.


I added the Parmesan cheese to the top of the pasta and it soaked up a little of the extra broth to make the pasta a little more dry.


My husband and I ate it but it wasn't on of our favorite meals that we have ever tried.  I decided that it needed a little more seasoning next time to make it more flavorful and we might try it as a side dish next time. I brought the leftover noodles to work but added some basil and garlic salt.  It made it much better so add seasoning to your taste.

I used the leftover broth to make my simple fried rice later in the week so it wasn't a total loss. Lots of leftovers that got used :)

Amish Egg Noodles




Ingredients:

2 tbsp butter
1 tsp chicken bouillon (or one cube)
2-3 cups chicken broth
1 1/2 cups or 12 oz egg noodles
Seasonings and Parmesan cheese

Directions:

In a large pan, melt the butter and allow to brown for about a minute. Add broth and bouillon. Bring to a boil. Add in the uncooked noodles and bring to a boil once again. Cover pot with lid and remove from heat or turn it on low. Allow to sit for about 25 minutes, stirring every few minutes. Once cooked and liquid is absorbed, sprinkle cheese and seasonings to taste.
