What to do with Leftover Corn on the Cob?

I had a BBQ and we had a bunch of leftover corn on the cob and I wasn't sure what to with it.  I knew that it was already cooked and I better figure out something to do with it soon before I was throwing it out.  I was trying to do better with not throwing out good food just because I didn't get to it fast enough.  I knew that we weren't going to be eating it off the cob so I cut off all the corn.



I can't saw that I did the best job but this was all that was left of the cobs.


I was thinking about what I was going to do with them and I remembered my favorite salad at the Mike's American Grill chain.  They had blackened corn on the top of their salad.  I was set on what I was making!


I tried to use my grill pan because I was also cooking chicken.  I put a little oil in the bottom and turned up the heat.  Most of them ended up with a blackened top which looked a lot like the restaurant and tasted yummy too!!


The restaurant uses a Buttermilk Ranch which is amazing...sadly, I don't have anything nearly that good but I used Poppy Seed on my salad and my husband used blue cheese (because he always does).  It made such a great salad that I ate it on two different nights.  It was amazing and almost a reason to go and buy the corn on the cob just to have extras for this salad.
