Apple Butter Spice Muffins

I decided that I really needed to use the extra items in my fridge that were just sitting there like the apple butter, hot fudge sauce, and carmel sauce (as well as a weird mustard).  I went in search of my first recipe and found one to use the apple butter that I saved a long time ago.  YEAH!  I had all the ingredients at home so it is a was no brainer that I was making it.  Check out the original recipe because I did change it a lot to fit my family.

I decided muffins were a good place to start because my son made the declaration that he wanted muffins in March.  I was trying to translate four year old speak and assume that meant that he wanted muffins.  I made them while he was in school and brought one for him to eat on the way home.  He declared that I was silly and that he didn't want muffins today (being that it was still February) but muffins in March.  Of course, he ate the whole thing but I guess I will be making muffins again in March :)

Anyway, back to the actual making of the muffins.  I took out all the ingredients to make sure that I was all set.

I mixed the dry ingredients in the bowl.  I changed up the spices a little because I love cloves and there wasn't any in the recipe and I didn't have allspice.  Plus, I added the cinnamon in a heaping spoonful because I really love cinnamon.  I don't think that you can have too much.

I mixed the wet ingredients in the measuring cup (except the apple butter because it wasn't big enough).  I figured that if I poured them all in at the same time that it would be good enough. 



Here are the end product that I ate warm and loved them. 



They were a little less sweet than other muffins so I wasn't sure that they would be popular with my family but they liked them too.  I think that they are much tastier warm.  I may change the recipe again when I make them again but I will make them again.  If you would like to make them, check out the recipe below.



Apple Butter Muffins
  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. ground cloves
  • 1/4 tsp. ground ginger
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • 1/4 cup canola oil
  • 1/2 cup Apple Butter (heaping)
In a bowl, combine the first eight ingredients.  Combine egg, milk, oil and 1/2 cup Apple Butter.  Stir into dry ingredients just until moistened.  Fill greased or paper-lined muffin cups with batter.  

Bake at 400 degrees for 15-18 minutes.  Cool 10 minutes before removing from muffin pan.

    1. I did too! I would add a little extra spices and sugar on top next time but they were a nice muffin that wasn't super sweet. I hope that you like them.
