Amish Friendship Bread: Citrus Muffins

I was looking for something a little bit different and I found these fun muffins.  They have jelly/jam mixed into the batter to give them some more flavor and moisture.  I didn't get a chance to make these but my mom did and she said that they were fabulous!!  I hope that you get a chance to try them too :)

Prep Time: 15 minutes
Cook Time: 25 minutes
Servings: 30
Yield: 30 muffins
Ingredients

1 cup Amish Friendship Bread Starter
3 eggs
1/2 cup butter, melted
1/2 cup milk
1/2 cup sugar
1/2 teaspoon lemon extract
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups flour
1 large box instant vanilla pudding
1 cup walnuts, chopped
1 cup peach or orange marmalade jam

Directions
  1. Preheat oven to 350° F (175° C).
  2. In a large bowl,  add first six ingredients and mix well.
  3. Stir in nuts and jam.
  4. Use cupcake liners, spray muffin tin with oil or butter.
  5. Pour batter evenly into muffin tins.
  6. Bake 25 minutes until toothpick inserted in the center of the muffins comes out clean.
