Menu Plan Monday 12/12



Monday- Chicken fries, Buffalo Chicken and homemade fries
Tuesday- Pasta with sausage sauce and garlic bread
Wednesday- French Dip Sloppy Joes- Went with leftovers because my husband had a work thing
Thursday- Chicken tacos with spicy saffron rice- Went with leftovers after Santa
Friday- Chicken Paninis and Leftovers
Saturday- Grilled Cheese and Soup or Roast Chicken
Sunday- Breakfast for dinner

I think that last week went pretty well.  I got the first three meals made on the days that were planned but we went with leftovers on Thursday.  Then Friday came and I went to gathering with some friend but they were ordering pizza that wasn't my son's favorite so we ate some more leftover before going over.  I went with the original plan for Line Chicken on Saturday instead of Thursday but got it done.  I used all the leftover bread crumbs from crackers, chips and pretzels as well as lots of homemade breadcrumbs from the freezer.  I had some frozen lime juice that was the perfect amount.  I had a little end of the jack cheese left so I grated it and melted it on top in the oven.  It was really easy to use the end of a bunch of things in the fridge with leftovers and my lime chicken yummy meal.  I also got a lot of breaded chicken made so I used the rest to make buffalo chicken with melted blue cheese for Sunday.  Another super easy meal to throw together so super glad that I got two meals made together for an easy weekend.

Here is hoping that I pull off this week with all the last minute holiday preparations and shopping that I still have to do.  I am ready for Monday and Tuesday but that is it!!  I made peanut butter cookies, chocolate chip muffins and cinnamon rolls for our treats for the week.  I still have a few more things to make but don't know if there is going to be more time this week but I know we will enjoy the things that are made.  This is the last week for my work and my son's school before winter break so I know that we will have even more things going on next week so hoping to make lots of lists and check lots of things off!!!  Hope you are going to have a good week too!!!

  1. Thank goodness for leftovers. I love using them up just by reheating them and serving again. Sometimes there isn't enough for a full meal, so it transforms into part of another. But I love that I don't have to cook the whole meal from scratch when pressed for time. I really enjoy being able to throw little bits and bites of things from the fridge into the meal, like soup, stew, a casserole, or pizza.

    1. Love to use the bits and pieces to make into a meal too!! They are best kinds and the easiest nights. I get to run the dishwasher and hope that there aren't a lot of other dishes and even if there are then I have a little more energy to wash all the dishes :) I need to try pizzas again soon!!

  2. So glad that your menu plan worked out well last week. Hope it does the same this week, too. It's good that there's room for flexibility, too, so you can have leftovers and move the planned meal to another day.

    1. Flexibility is a must. I already changed things a little because my husband is going to go out with work friends on Wednesday night so I am going to probably do leftovers for my son and I. Great news because I didn't take anything out or cook ahead for that night yet :)
