Menu Plan Monday 9/26







Monday- Chicken fries, Buffalo Chicken and homemade fries
Tuesday- Pasta with garlic bread (sausage for my husband from the freezer)
Wednesday- Enchiladas with spicy saffron rice
Thursday- Spicy Honey Mustard Chicken
Friday- Chicken Paninis with leftovers
Saturday- ??
Sunday- ??

I really don't know where the month has gone but I can tell you that I haven't gotten nearly enough done since going back to work.  I try to get the laundry done on the weekend and do the dishes when I get home from work but there isn't always enough time to get everything done so there are often many days that I am working for hours trying to catch up.  I have to put the plan together for October so hoping that I have time to do that soon because it is literally next weekend!! AHHH!!

The great news is that I had the menu plan in place and kept to it.  Last week we had lots going on with my husband working at home and at work, my working two jobs and my son having soccer practice, book club and haircut after school.  The boys also went to the football game at the local high school because my son got to run across the field at the beginning which a bunch of his friends were doing and he got in free with my husband.  I stayed home and got some work done although not enough to be caught up at home.  Saturday brought a late lunch for Salsa Sloppy Joes from the freezer and even later dinner of soup and chicken fries for my son.  Sunday brought on the take out pizza and cheesesteak for a late lunch and smaller dinner.

Here is hoping that another busy week still leaves enough time to pull everything off and that I got enough done over the weekend to be ready for the week.  Starting on the third load of laundry and hoping that my feet are up to standing at the sink to wash dishes and finish cleaning!!  Hope you had a productive weekend.

  1. I have told you before that I am in awe of everything that you manage to get done, and I still mean it. To be able to take care of your family and feed them for as little money as you do, is very commendable. Being able to work outside the home and get the washing done up is the icing on the cake. *laugh* Give yourself a pat on the back.

    1. I was doing okay with one part time job but doing two is killing me!! It is so hard to get everything done in a day. I make a to do list and it is more of a weekly list and I try to fit all of it into one day :) I think that is why summer is more fun for me because I wasn't working either!!

  2. It's hard to work outside the home and still be on top of everything at home, too. If time and the grocery budget permit, make double batches of main dishes whenever possible and freeze half for a future meal. I used to cook two main dishes on the weekend and keep in the fridge to alternate during the week. Fortunately, my daughter was fine with eating the same thing/leftovers. If not, there was cereal! She usually had 4-6 hours of homework each night, so there was no time for her to help me with the cooking or housework.

    1. 4 to 6 hours of homework a night?! Good grief! And to think that nowadays the trend is to NOT give any homework. One has to wonder how the kids will get to practice all the stuff that's mandated that they learn. I'm not anti-homework at all but 4 to 6 hours, though, sounds excessive, no? She must be very relieved to be finally done with all that!

    2. Totally agree. We only had Salsa Sloppy Joes because I made a double batch and froze it or else we would have been looking at cereal too. I know that homework is crazy. I only have a 2nd grader and homework is starting next week but we used to do 20 minutes of writing, 20 minutes of homework packet and 20 minutes of online math program. I thought 1 hours was crazy for a 1st grader so trying not to hold my breath until I see what happens when we get 2nd grade homework!!! We don't get out of school until after 4 pm so there isn't 4 hours before bedtime!! YUCK!

  3. You're always so busy, Alison! I don't know how you do it all and still find the time to read all the books that you read. I know you said you don't sleep much, but, wow.

    I published my menu as well and then promptly screwed it up again by treating my son and myself to McDonald's for dinner (I had a BOGO coupon so it wasn't so bad) and my daughter is out with her BFF. So goes my life...

    I hope you have a great week and that you don't run yourself too ragged. I completely sympathize with not wanting to stand at the sink to cook or do the dishes when your feet hurt after standing most of the day. It hurts so much! Do you have a nice cushy mat, at least, in front of your sink? And some comfy shoes?

    1. LOL!!! Straight to McDonalds!! I went through the take out spending for the last few months and can't wait to share it with you because I think that you will smile a little.

      I have been going to the doctor for my feet and they are getting a little better but at the end of the day, the last thing that my feet want are to stand in front of the sink. I didn't finish the dishes... I know you aren't surprised. I washed some today but still made more then I cleaned!! We are going to stop eating so that I can catch up! I do have a cushioned mat in front of the sink and the stove so that I can stand there longer with my hard wood floors but I normally wear my croc flip flops and the foot doctor says those aren't good but it is hard for me to wear shoes all day (if at all). Looking at the dirty kitchen right now and feeling bad..but not bad enough to get up and do anything yet :)
