Menu Plan Monday 9/12



Monday- Chicken fries, Buffalo Chicken with Homemade Fries
Tuesday- Pasta with garlic bread (and sausage for my husband)
Wednesday- Tacos with spicy saffron rice
Thursday- Grilled Chicken with white rice
Friday- Chicken Paninis with leftovers
Saturday-?? Might have Soccer Game ??
Sunday-Leftovers

Last week we did pretty well except we switched Thursday and Friday and ended up doing a pot luck on Saturday and Pizza on Sunday.  It was a very busy week but having the plan in place made sure that we always had something ready for dinner.

This week, we are going with a few things  that are really easy and I don't have a clue what I am going to marinate the chicken in because my husband took out the plain chicken so I will decide on either Tuesday or Wednesday but maybe just Italian Dressing with extra seasonings or some seasoned skewers from the cupboard.  No clue about soccer because we haven't gotten the schedule yet but we are supposed to have a game this weekend but not a clue about what time.

  1. Are those going to be chicken tacos?!

    I haven't done a menu yet but I did channel my inner Alison and set some CHICKEN to defrost for tomorrow. I'll decide how to cook it tomorrow morning.

    You marinade your chicken? I never think ahead enough to do that. I think I might stick mine in the crockpot to make Southwest Chicken Stew because it's really easy and my family loves it. Also: leftovers!

    Have a yummy week, I hope you get that soccer schedule soon. It's annoying that they haven't given it to you yet. I hate it when all those coaches (and the older boys' band director was the same, btw) think that their activity is the only thing going on in your life. Arrgh.

    1. LOL...inner Alison :) I usually buy a lot of chicken at one time and cut it all up into tender sized pieces and bag them up in the size that my family eats. I marinate some and leave some plain and throw them all in the freezer. They usually defrost and we can throw them right on the grill with great flavor and little effort. I use lots of different kinds and usually make it up from salad dressing and other seasonings. The bonus is less to clean up when you grill and the heat is outside :)

      The coach just got the roster last night and we have practice on Tuesdays so at least I guessed it right. We are fine with everything now that it has worked out but still no schedule for the games. I might have to talk to the one lady at school who works for the soccer program and get the details!!!!

  2. Chicken seems to be the meat of choice this week. I put a piece of chicken breast to thaw, myself! I just pan sauted it and added some of the leftover cream of chicken soup I had made earlier, to it.

  3. That sounds good. Do you do it over rice or pasta or just by itself? It is starting to get cold my husband favorite meal is the chicken and rice casserole with the cream of chicken soup in it :) I already have everything to make it because it isn't long that he will be asking for it :)
