Menu Plan Monday 1/11








 

Monday- Spicy Honey Mustard Chicken with mac and cheese
Tuesday- Pasta with garlic bread or pizza bites
Wednesday- Popcorn Chicken, Chicken fries and homemade french fries
Thursday- Stir Fry Noodles with chicken and egg rolls
Friday- Quesadillas or Enchiladas with saffron rice
Saturday- Little Caesar's Pizza
Sunday- Roast Chicken with sides

I am looking forward to a busy week leading up to my son's birthday.  We are hoping to have lots of fin with the kids during the day and then the night to hang out with the adults so we are getting pizza which is my son's favorite meal.  I am sure that we will all enjoy the celebration and I get a break from cooking for the night.  Hope you have a great week and lots of great food!

**Update:  I was doing so well with my menu and made exactly what I set up to make on Monday, Tuesday, Wednesday, and Thursday but then my parents decided that they were going to be able to come into town for my son's birthday party.  I decided to make it super easy on Friday night and have Barber Chicken, white rice and garlic green beans.  Instead of the roast chicken on Sunday, I took a lasagna out of the freezer so that I wouldn't have to make the chicken because that doesn't work out well with my parents in town.  I am hoping for this to be a change to make things easier!!

  1. I love how you adjusted your menu to fit with what was going on in your life to make it easier. I know I do that often as needed. I would rather cook an easier dinner when life gets busy than expected than try to push through and have it not work out. I hope your weekend goes well!

    1. Usually we can move things around but when you get to the end of the week that is busy, it is always good to have some back up in the freezer!! The best part about couponing and stocking up is to have those back up plans so that dinner doesn't turn into going out :)
