Thrifty Thursday: Pumpkin Muffin with strudel topping

I was thinking a lot about this weeks Thrifty Thursday post and I decided to go with the season.  Do you know how much it costs to get a fancy muffin at Starbucks or other cupcake places?  I do and they are $3-$4 each.  I can't imagine spending that on one breakfast or snacks.

Normally, the muffins and bread that I make are simple and kind of basic....mostly because my son and husband prefer them that way but also because it is easier.  I had some oat packets leftover from the top of the yogurt containers that my mom and mother in law ate without the oats.  I decided to make two special muffins just for me.  See how the rest of the pan is the normal muffin??


Since I was only making two, I decided to make the strudel on top of the muffin batter.  I put a few little pieces of butter, oats, and brown sugar.  After I ate them and told my husband how much I liked them, he asked where they were so that he could try them....umm, I ate the only two that I made.  Next batch, I decided to take pictures and make a whole batch with the oats that I had left.



It cooked up really nicely and I had a special muffin for breakfast (the first time and for many other breakfasts after that).  My parents came and finished off the last one left!!  I hope that you try this for your own muffins soon.


Here is my pumpkin bread and muffin recipe if you want to try it yourself!!  You can also try it with any of your favorite breads and muffins.  Let me know how it works out.  If you want to add the strudel topping, mix up what sounds good to you but here is what I added, putting it as needed on each muffin top before baking.

Oat Strudel Topping





  • 1/4 cup brown sugar
  • Oats or Quick Oats
  • 2 tablespoon butter or margarine
