Menu Plan Monday 9/9





Monday- Beef Enchiladas
Tuesday- Breakfast for Dinner
Wednesday- Teriyaki chicken with simple fried rice and garlic green beans
Thursday- Hamburger Philly Cheese Steak Pasta
Friday-Pizza
Saturday- Leftovers/Fried Rice, Mozzarella Sticks and mac and cheese
Sunday- Leftovers/Olive Oil Pasta

This is the first week that my son goes back to school so I wasn't sure how much time I was going to have and what I would have to do so I planned an easy menu so that I have the week to do what I need to do!  I can't wait to have some free time and start cooking, baking and shopping without interruptions of a little person!  I am going to miss all the love and companionship but having a little break is probably going to be good for both of us! 

I moved a bunch of things around as the week went through because I had some ground beef that I got on sale that was unexpected.  My husband requested enchiladas so I made them and made extra taco meat which I put in the freezer.  I also cooked some plain hamburger meat which I used in the Philly Cheese Steak Pasta and froze the rest.  I love using the pan once and getting two meals out of it.  The freezer is fully stocked with ground beef now and I have one bag of salsa sloppy joes, taco seasoned meat and plain ground beef that will make for easy meals in the future.
