Nutella Oat Breakfast Cookies

When I saw this recipe, I got really excited.  Baked Oatmeal cookies in just four healthy ingredients.  It looked like really yummy baked oatmeal for breakfast and I was read to make it when I got the new Jif Chocolate Hazelnut spread.  I did a little taste test a few times to make sure that it tasted the same as nutella.  It passed the test the first time but I kind of thought it needed another try just to make sure :)  YUMMY!!


I had all the ingredients in the house so I was super excited to make these breakfast treats.  The original recipe called for whole wheat flour but I wanted to try it with white flour first.  I might try it with whole wheat next time though because it would add a little more health and I don't think that you would taste much of a difference.

I got to you use my brand new jumbo muffin pan that I got for my birthday which was also exciting!!

I measured out the Jif spread into the 1 cup measuring cup and realized that was the rest of the jar!!  Good thing that I bought two when they were on sale!!  Normally $4.29 and I got them for $1.29 each with the wonderful Super Doubles at Harris Teeter.  I highly recommend trying the Jif kind if you can find it cheaper at your stores because it tastes just like Nutella.  It was only a few cents less expensive at this store but the coupon made the big difference :)


Back to the recipe, I mixed all the ingredients in the bowl.  It made a really thick batter which smelled yummy but didn't look really yummy.


Then, I greased the pan and pressed the dough evenly in the jumbo muffin pan.


They cooked up a little too quickly and I should have checked on the muffins but I didn't :(  They were a little too well done around the outside but they were so good that it didn't matter!


You can really see it in this picture but even though they were a little over done around the edges but they make a really nice sized cookie/muffin.


They are hard to stay out of but I try to limit myself to just one!  I am not sure a picture does them justice because they are so yummy and chocolatey but here is the soft inside.



I hope that you try them for yourself so that you can taste the flavor.  I know that it will use a lot of the jar so be prepared to use almost all of the Nutella or Jif spread in one batch!  Check out the original post at In Katrina's Kitchen for her great pictures :)

Nutella Oat Breakfast Cookies

Ingredients:

  • 1 Cup Nutella
  • 2 Eggs
  • 1/2 Cup Flour
  • 1/2 Cup Quick oats

Directions:

  1. In the bottom of a medium bowl (or stand mixer) beat together Nutella and eggs. 
  2. Gradually stir in flour and oats until combined- makes a thick batter.
  3. Spray the bottom a large jumbo muffin tin and drop about 3 Tablespoons batter into each well.
  4. Bake at 350° for 25 minutes.
Note:  I followed the directions and mine were overcooked a little on the edges so check after 20 minutes.

    1. I tend to eat the nutella out of the jar too but I decided to stop a little short and see if this would stretch the yummy nutella flavor and it really did!!! They are super tasty and a great breakfast treat. I would love to guest post and I will drop you an e-mail soon!!
