First I made the dough and waited for it to rise.
I rolled out the small piece of dough and put the taco meat and cheese in the middle. Normally, I would have heated the meat to make it easier to scoop but without a microwave, it seemed easier to just scoop cold.
Then, I folded over the two sides and smooshed them together. I sealed the ends so that none of the insides could get out. I put them with the sealed side on the bottom of my baking sheet. I made three because that is how much taco meat I had left.
Here is what they look like after they are baked. Aren't they huge??
I thought that I would eat one and my husband would eat the other two but we both just ate one and I got to put the last one in the freezer so we have one later for a nice hot lunch!! Check out that yummy inside.
For this, I used my normal pizza dough recipe and my normal taco meat and shredded cheddar cheese. It is a great way to use any leftovers to turn them into a new meal. If I had rice, I would normally have added that too :) I hope that you try this new twist on the pizza ingredients and make yourself some taco pockets for dinner (and hope to get a few for the freezer). I promise your family will love them!!

That looks awesome!! It would be great with some black beans, tomatoes and corn. Great idea, thanks!

ReplyDeleteI always think of using pizza dough to make pizza but I am trying to expand to other things. I hope that you try them out with your own flavor of leftovers :)
