Blueberry Bread Recipe

I found this recipe at Mommy Hates Cooking (a great blog and a great name right??) and I couldn't pass it up.  Sadly, I didn't have any blueberries in the house to make it :( 

I saved the recipe to make the next time I got some blueberries.  My mom went to pick some and brought me three big bags... one for the fridge and two for the freezer to last through the year.  This was my first blueberry recipe when I was ready to bake and what a great way to start!!!  We decided to use a 6 x 6 baker and 8 x 8 baker since these go straight in the dishwasher... we were going to make a bunt pan but neither my husband or myself wanted to clean it. 

Check out this thick batter spread in the pan.  It almost looks like it is cooked already.

Here it is up close to prove that it is not cooked yet so be prepared that this a thick doughy batter.  Also, if you find a little not mixed in at the bottom of the bowl, just press it in and it will cook up just like the rest of the batter.

This bread is yummy and crispy with a butter taste.  Don't ask me where the buttery taste came from since there isn't any in the recipe but I thought that I was going to hide it so that we didn't finish it all in one day.  I highly recommend the pans like we used if you like the crispy top and edges.  I might try the 9 x 13 pan next time but I wasn't sure how far the dough would spread and this was perfect!

Blueberry Bread


Ingredients:
3 Cups Flour
1 Tsp Baking Soda
3 Tsp Cinnamon
1 Tsp Salt
2 Cups Sugar
3 Eggs
1 Cup Oil
2 Cups Blueberries
Directions:
Preheat oven to 350 degrees.  Combine all wet ingredients and mix well (I did it right in the measuring cup).  Blend dry ingredients together in mixing bowl. Add the wet ingredients to dry ingredients and continue to mix until well combined. Fold in the blueberries. Spray 2 bread loaf pans, bundt cake pan, or baker pans with non stick cooking spray. Pour (or pat) in the thick batter and bake for 1 hour.

    1. I promise you won't be disappointed. I made it again this weekend for my parents and they both loved it. I thought that it didn't taste the same as last week and we still loved it. I think that it might be a little different every time I make it!!!
