Leftovers Revisited

I know that we aren't the only family with a million things to do on the weekend but it seems that it is always time to eat on the weekend.  I am the first person to say that I hate leftovers.  I know that is a bit strong and I tell my son that we don't hate things but I truly dislike leftovers :)   Taking a container out of the fridge and throwing it in the microwave and eating the same thing again doesn't appeal to me.  That being said, I try to make extras during the week so that we can plan for one day of leftovers on the weekend (or sometimes during the week).  Sounds crazy for someone who hates dislikes leftovers, right? 

I had extra rice from two different meals and extra chicken from two different meals so I made my husband fried rice.  It is great to throw it in the pan and use up four containers from the fridge.  I added an egg and peas to make it an even more complete meal.  Then, I had beef barley soup mix which I got as a Christmas gift (Thanks again Ann).  I added the mix, water per directions, leftover meat and leftover potatoes.  It made the yummiest soup/stew and cleaned out two more containers of leftovers from the fridge. 

It does seem like I am a short order cook to make different meals for each person in your family but if you premeditate your leftovers (and your family likes the same food), you can have enough made ahead of time.  I don't usually plan ahead of time but pull out what is in the fridge to see what we have left and what I can do with it.  The internet is a great way to find new recipes but you can also reach into your creative mind- paninis, omelets, soup, salads, casseroles and many others.  I highly recommend trying it at least one night a week.  Try it and see what your family thinks :)  Let me know!!!!
