I made pancakes on Saturday morning which my husband and I ate but my son only ate three bites...and then asked for the other kind. He likes the kind from the freezer and not the fresh ones no matter what I try. We enjoyed blueberry and chocolate chip pancakes while my son ate the freezer kind.
On Sunday morning, I decided that I was going to make lemon poppyseed muffins (from a mix). I added leftover blueberries for the lemon poppyseed muffins from Saturday's pancakes. They were yummy but didn't hit the spot so I decided to make Cinnamon Chip Scone Mix that I got for Christmas from my friend Ann. They were from the Great Harvest Bread Co. and only needed butter, water, egg and vanilla which was super easy. I put them in my wonderful scone pan which was a gift from Ann from my wedding. I think that the hint is that Ann wants some scones :)
The scones came out of the oven and looked really yummy. They had a whole wheat and oat texture with the cinnamon chips were really tasty. I don't think that they tasted very scone"y" because they weren't as dry as scones normally were. I am going to try to make a scone recipe that I had with cranberries as soon as I get cranberries next :) I will work hard to make these from scratch sometime soon :) Okay, I think that I am going to go grab another one now that I looked at that picture again!!!
I didn't get anything else baked for the day but I will call it a win that we had a yummy breakfast (and ate them as snacks through the day). Hope you had a great weekend!
