Okay, so it is barely Tuesday but I do plan my meals just about a month in advance so I did have mine written down in the drawer so let me share with you what I have on the menu this week (and then how I do it).
Monday- Asian Stir Fry with white rice (dip chicken cubes in corn starch and pan fry in oil and add sauce)
Tuesday- Buffalo Chicken Sliders with veggie mac and cheese
Wednesday- Caribean Jerk Chicken tenders with brown rice
Thursday- Speidie Chicken tenders with white rice
Friday- Spagetti and Meatballs with garlic bread (family coming into town)
Saturday- Raspberry Chicken tenders with whole wheat cous cous
Sunday- Take out Chinese food from our favorite restaurant
