The first step was to melt the butter. Normally I would use another bowl and melt it and pour it into the bigger mixing bowl but I decided since there was nothing to cream that I would stir it by hand. I put the butter in the dish and put the whole thing in the microwave. It helps because then nothing splashes out of the bowl.
Then, I added the brown sugar which incorporated easily. This is where you would add the vanilla but I was out of it so I just skipped it.
After stirring all those together, I added the egg. After stirring it in, it looked mostly the same as the first picture so glad I took a picture with an egg in it or you might not have believed me.
Time to add the dry ingredients.
Mix all of the dry ingredients together. I used a fork but feel free to use what you want to...my mom always uses a rubber spatula but I just like the fork. The ingredients come together into a thick batter.
Then, add 1/2 cup of chocolate chips to the batter and mix them in.
Grease 8 x 8 or 9 x 9 pan and spread in the batter so that it reaches the corners. Top with 1/2 cup of M&Ms or chocolate chips. Press them in a little so that stay in the batter.
Bake the bars and then you get a nicely browned pan that raises a lot at the sides.
After our taste test, my husband and I agreed that there was too much chocolate on it and I would make it without the M&Ms on the top next time. I know it sounds crazy that there could ever be too much chocolate but the flavor of the blondie was really good and all of the chocolate covered up the rich buttery goodness of the flavor. But the nice crispy top with the chewy center was amazing!!

Chewy Chocolate Chip Blondies with M&Ms
1 cup flour
1/2 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1/3 cup butter, melted
1 cup packed brown sugar
1 egg, beaten
1 tbsp vanilla extract
1/2 cup chocolate chips
1/2 cup M&M's (optional)
- Preheat oven to 350 degrees.
- Grease 8x8 inch pan.
- Melt butter on the stove or microwave.
- Mix brown sugar into melted butter
- Add egg and vanilla to brown sugar mixture.
- Slowly add all dry ingredients, mix until well combined.
- Stir in 1/2 c chocolate chips then press batter into pan.
- Top with 1/2 c M&Ms and press into dough (optional)
- Bake for 20-25 minutes.
- Cool, cut and enjoy!
