7 UP Greek Yogurt Biscuits

We were having pasta for dinner and I didn't have any bread to make garlic bread.  That is kind of show stopping in this house.  I was trying to figure out what we were going to have instead of garlic bread and I remembered this recipe.  If you want a funny story and see how messy this batter can get, check out my original post for my 7UP Biscuits!!  Check out My Litter to see her recipe and how she makes them.

I had some Bisquick in the cupboard that I got free during the last sale.  I had some flat Sprite in the fridge.  I had the butter!!!  Last ingredient that I needed was sour cream and I didn't have any.  I remember why I didn't make this recipe very often because I never keep sour cream in the house.

I was going to move on and make a different and boring biscuit but I remembered something.  Lots of people say that you can use Greek yogurt instead of sour cream in recipes.  Seems like a good time to try it out and what would I loose!  I only had french vanilla yogurt but it didn't smell like a lot of vanilla so I figured that it would work and would be for breakfast if all else failed.

I measured out the 2 cups of Bisquick and my little helper poured it into the bowl.  He decided that he should stir while I measure the Sprite and yogurt.

My little helper mixed for a little bit but then it got a little too thick for him to handle.  I stirred it together a little longer and got this sticky dough.

While we were mixing, we had put the butter in the pan in the oven while it was preheating to melt.  We got this in the pan.  The original recipe says to roll out the dough and cut biscuits.  We did not have any success doing that last time so I just let my helper use the small spatula to pick them up and gently place the dough into the butter.

I wish that I took a picture but they went into the oven quickly so that they didn't have little fingers stuck into them.  Having a helper sometimes slows down the process but it is always entertaining.

Here is the fluffy goodness that came out of the oven for us to have with our pasta.  We each had a piece and I didn't take a picture of the nice fluffy inside of the biscuit but I promise that it is light and airy with a great crispy top.

We ate the leftovers for breakfast the next day with a little butter and jelly.  They were light and delicious and I decided that I would be making them again soon.  I hope that you try them soon!!  In case you want to try, here is the recipe.

Greek Yogurt Biscuits

2 cups Bisquick (or homemade biscuit mix)
1/2 cup or 8 oz. Greek Yogurt
1/2 cup 7-up (or any other lemon-lime soda like Sprite, Sierra Mist)
1/4 cup melted butter (I used margarine)

Measure biscuit mix into bowl.  Add 7-Up and Greek yogurt. Makes a very soft and sticky dough.

Melt 1/4 cup butter in a 9 inch square pan in the oven while it is preheating. Place biscuit dough in pan and bake at 400 degrees until golden brown.  Cut and serve warm.
