Fluffy Pudding

I made some chocolate chip cookies and was looking for another family friendly dessert for our last minute BBQ.  I decided that I would make Fluffy Pudding with fun toppings.  Ever had fluffy pudding?  Well, you probably have but if you haven't, you should whip some up to try soon.

Here is what you need to start:  One container of Cool Whip, one package of instant pudding and 1 1/2 cups of milk

Then, add the package of instant pudding into the milk.  I used Jello Sugar Free Chocolate Fudge which is my favorite (and also my son's).

I mixed the pudding up with a fork.  I normally use a special whisk that has balls on the end but it seemed like more trouble to wash something when I could just stick this in the dishwasher.  You should have seen the pile of dishes in my kitchen already.

Then, I put a defrosted container of Cool Whip (okay mostly defrosted because I didn't plan that much in advance) into another bowl.

Add the liquid pudding mixture to the bowl with the Cool Whip.  I realize that this step doesn't make it look appetizing but just wait until you see the finished product and if yours looks like this, you have done nothing wrong.

Stir the pudding mixture and the defrosted Cool Whip together until completely mixed.  Then, refrigerate (I forgot to take a picture before putting it in the fridge so here is what my fridge looks like too).

I was originally hoping to serve it in this bowl but it ended up being too big and I didn't want to clean up the edge of the bowl to look pretty so I moved it to a new bowl when we were ready to serve.  I also wanted to use a container with a top since we were going out side and I didn't want mine with a side of bugs :)

Doesn't that look yummy?  The kids certainly thought it did because I had one licking the spoon and one licking the spatula by the time that I was done.  They were all running for the dessert table.  I served it with a side basket with goldfish grahams, marshmallows, chocolate chips and raspberry granola for them to top on their pudding.  I did mine with chocolate chips but I decided that I liked it much better plain.  It was a nice fluffy dessert that I would totally make again.  Especially since the kids loved it!!!

I think that it tastes better than pudding or mousse but you can judge for yourself.  I hope that you try to make it for yourself (or to share with the kids) sometime soon.  Let me know what you think!!

Fluffy Pudding

1 1/2 cups milk
1 package of instant pudding
1 (8 oz) container of Cool Whip (or store brand whipped topping)

Mix milk and pudding until combined.  Add to thawed Cool Whip and mix until combined.  Refrigerate until set.  Serve plain or with toppings.
