Amish Friendship Bread: Double Chocolate Chip Muffins

I was looking for something to make with my new Amish starter that was chocolate and rich!  I decided that this met the craving.  Plus, my son is a chocolate hound so I thought that this would ease the back to normal life from having the junk food with grandma and grandpa :)

I grabbed everything from the cupboard and fridge and tried to put together everything as quickly as possible.  The recipe called to put everything in the bowl and mix it.  I actually mixed all of the ingredients except the chocolate chips and mixed it.  Then I poured in the chocolate chips and gave it a little mix.  It made a nice thick batter that looked almost like brownies.


Then I used a ladle to put them in greased muffins tins.  It made 24 muffins which is way more than my family can eat but it is nice to have them as special treats.


They were nice and fluffy!  My son and I enjoyed them straight out of the oven and again through the next few days.  Do you want to try one too????  Feel free because we have plenty!  I am going to freeze a bunch and bring them out again when we have company because I have a feeling that my mom is going to love them :)

Servings:  24
Yield:  24 muffins

Ingredients
1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
1/2 cup milk
1 cup sugar
1/2 teaspoon vanilla extract
1/4 cup cocoa
1 cup chocolate chips
1/1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups flour
1 small box chocolate instant pudding

Directions
  1. Preheat oven to 325° F (165° C).
  2. In a large mixing bowl, add ingredients and mix well.
  3. Line muffin tin with cupcake wrappers.
  4. Fill muffin cups halfway.
  5. Bake for 20 minutes or until toothpick inserted in the center comes out clean.
