After a long power outage, the first thing that I wanted was home cooked yummy baked goods. I decided to use my slightly frozen blueberries to make muffins. It was a great after dinner treat and a great way to clear out the freezer to make my freezer nice and clean.
The batter looks a little purple from all the berries but it still cooks up to a nice pretty white muffin.
The batter usually makes 16 muffins which I normally forget and fill my two 6 muffin cups and then I have to get creative with the remaining batter. I decided on a coffee cake and made a strudel to go on top from the recipe that I used on the pumpkin bread the other day. Strangely, the topping sank to the bottom of the pan. I was a little worried about how it was going to turn out when I saw that it was not really on the top of the cake as I expected.... we just decided it was upside down cake. It was still super yummy so even failures are yummy in baking.
This is a recipe that I got from my mom ages ago and it is the recipe that I always use for blueberry muffins. I will write the recipe so that other people can understand it since my mom's recipe is written a little strange and most people don't follow recipes with her directions... I have had years of training. I hope that you enjoy too!!
Never Fail Blueberry Muffins
1 1/4 c sugar
2 c flour
1/2 tsp salt
2 tsp baking powder
2 eggs
1 c milk
1/2 c melted butter
1 c blueberries
Mix dry ingredients in a bowl. Mix liquid ingredients in measuring cup (or another bowl). Add liquid ingredients all at once to flour mixture. Work quickly only to mix. Do not beat smooth. Add blueberries. Put in greased muffin tins. Bake at 375 degrees for 25-30 minutes.

Weekly Goals 7/15
This has been a tough week because we started hard core potty training over the weekend- take no prisoners and don't go back to pull-ups! I have three bags of pull-ups in the closet just in case plus we are using them at night for now. I am excited to say that we used the bathroom out of the house this week and didn't fight about it. I am super excited that we might actually have this done before school starts so that he will be back in his class with his friends!!! Might have to go door to door to friends at school because I think that he is starting to doubt the whole thing about having to not be in diapers for school.

Spend time with my family- Might not be quality time since it is potty training week but there certainly is quantity. I think that my son is ready to revolt!!- Go to storytime at the library- We cancelled storytime on Monday because we were trying to work on the potty training thing and leaving the house is tough when you are going every 30 minutes.
Go to the Dentist with little man- We went to the dentist and got our new toothbrush, balloon, zebra, dinosaur, stickers, and a clean bill of health!!Go to see singer at library- Little man loved this and sang and danced his way through it! All the way until the end when the crowd started to clear and he realized how far he danced away from mommy and I got a huge running hug :)Playdate with friend at our house- We had a great visit with friends and the two highlights that he told Daddy when he got home were that he wouldn't leave his friend alone when he wanted to go to the other room and his friend went potty and then he went potty (and he shared his stool).Go to Movies based on books at library- This is a really fun thing to do because it keeps us out of the summer heat and entertains us with stories that we later get the books for and read. I really think that little man is enjoying seeing all the stories on the big screen and in the books. I sort of wish we had the scholastic DVD set that they are using. It might be a really practical baby shower gift going forward for me :)
Cut coupons- I got all my coupons cut early this week so that I could clean up my coupon basket because it was such a mess. I sorted through all my expired coupons and got everything back into the basket.Girls night with dinner and sleep over- After complicated planning and complex schedule juggling, we are getting all four girls together over the weekend to cook dinner, watch movies, and eat junk food- no kids allowed!!Shut off computer 5 nights to save energy- I started to shut the computer down on Sunday night and I got distracted...I actually used the intercom on the phone so that my husband could shut it down. I remembered to do it on Monday, Tuesday, Wednesday, Thursday, Friday, and Saturday without too much trouble.ReadMade from Scratch: Discovering the Pleasures of a Handmade LifebyJenna Woginrich-I finished the book early in the week and wrote the review. It should be posted soon!
- Clean dishes, counters and floors at least 6 days of the week- I did a horrible job this week trying to continually keep the house clean because I was constantly on bathroom break duty but I did the best that I could. I didn't touch a thing on Wednesday (and sadly, Tuesday is a little blurry but I give myself 70% that I cleaned up at least the counters). Here is hoping that next week goes better.
Clean dishes one night and not wait until the morning- I did this one night and then baked and made more of a mess that I still had to clean up and then we did them another night and I made tons more dishes in the morning. Both still better then coming down in the morning to a pile of dishes!! Just wish that they would stop appearing and they would self clean and put away.- Finish going through magazines (or at least make progress)- HAHA! I didn't do anything all week and then realized on Thursday when I was talking to my friend that I hadn't done anything all week. UGH! Why do I find this project so troublesome? Finally picked up a few on Friday night to go through them and made some folders to organize the articles that I pulled. Feeling better about it and just wish that I did a few earlier in the week.

July Budget Update
I haven't really started shopping for the month yet since I am trying to clear out the fridge and freezer after the power outage scare!! Luckily, I have been able to get creative and make a bunch of new pasta dishes for at least one night a week to stretch the remaining meat as far as possible to see if I can go the whole month since I also haven't seen a great deal on chicken or ground beef (our two house staples). I know that I have a lot of stocking up later in the month so I have been trying to have a super frugal start to the month. What do you think??

One Thing At a Time Book Review
I must have seen this book on someone else’s blog or through searching the library website to see what they had and decided that I should read it too. One Thing At a Time: 100 Simple Ways to Live Clutter-Free Every Day by Cindy Glovinsky is the second in the series. If I had it to do over, I would read the first book first. Making Peace with the Things in Your Life: Why Your Papers, Books, Clothes, and Other Possessions Keep Overwhelming You and What to Do About It is the first book and this books states that it was the starter guide…oops! I already went back and put the first book on hold at the library for when I am ready to read it :)
The great thing about this book is the strange format. It is broken into 100 different chapters. All of the chapters are steps that you can do to live more clutter free. Here is an example of the first ten chapters:
1. One Thing At A Time
2. Things Don’t Move Themselves
3. Breathe, Don’t Run
4. De-Clutter Your Body
5. Carry A Clipboard
6. Post Checklists of Routine Tasks
7. Roll Back Your Sleep Schedule by Half An Hour
8. Stop Perfecting, Start Bettering
9. Make Your Bed Every Day
10. Open the Windows
The titles may not be spoiler alerts but they directly relate to the topic of discussion. The chapter on carrying a clipboard is about going from room to room, clipboard in hand, to note the things that need to be done in each room. Although I know that this is helpful to see and note what needs to be fixed, I am not a 100% sure that the clipboard is really going to make you feel more powerful over the task….but who am I to know.
Each chapter covers an important topic and the short chapters help to read the book quickly. The book gave me a ton of ideas on how to start but since I sat down and read it so quickly, I might not do all of the steps suggested. This book is meant to be more like the word of the day calendar where you get an idea and try to work with it before moving on to the next topic. Of course, not all topics apply to all people so it might not work one chapter at a time best either.
If you have to clean out your house and don't know where to start, please check out this book at your local library or bookstore. I think that the small easy chapters will give you a place to start!! If you don’t want to wait, you can check out the author’s website at http://www.freshstartorganizing.com/ (I currently am without power so I didn’t check out the site yet). Peanut Butter and Choc Chip Banana Muffin Recipe
Can you say yum??? I was waiting for my bananas to get ready to make banana bread when I found this recipe. Sadly I was delayed with the 4 day power outage. I still haven't figured out how to bake on the grill :)
As soon as the power came back on, I cleaned out the refrigerator/freezer and deep freeze in the basement. Then I set to work baking!!! These muffins were at the top of my list. They did not disappoint.
The batter was nice and thick just like my normal banana bread recipe but you can see the yummy chips in it too.
I hope that you test out a new recipe and see how you like them too!!! The banana makes them healthy enough for breakfast and the chips make them yummy enough for dessert.
Peanut Butter & Chocolate Chip Banana Muffins
1 1/2 cups flour
1/3 cup of melted butter
1/2 cup chocolate chips
1/2 peanut butter chips
1 cup mashed bananas (about 3-4 bananas)
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 c sugar
1 egg
In a small bowl combine flour, baking soda, salt, and baking powder. Set aside. Mix together bananas, butter, sugar, and egg in a large bowl. Slowly incorporate the flour mixture in. Once the batter is mixed together fold in the peanut butter and chocolate chips. Add batter to a greased muffin tin or use cupcake liners. Bake at 350 for 18-20 minutes.

Thrify Thursday: Other Uses for Household Items
I went on the search for more Thrifty Thursday topics and I found some helpful hints that sparked some more ideas that I thought might be helpful if I put together to use things around the house for other uses.
1. Have an extra salt or pepper shaker around? Fill shaker with sugar for breakfast to add to coffee or cereal without getting out the whole cereal bowl. It is super easy if you already have a salt shaker around the house to fill with sugar...make sure to label to avoid confusion later. In addition, this helps allow kids to use it to add a little sugar without access to the whole sugar bowl. Fill another with cinnamon in sugar for a quick addition to top toast or baked goods with already mixed cinnamon and sugar.
2. Need a quick hot pad in the kitchen? Lay out Chinese chopsticks on the counter and put the pan on top. The height adds just enough to let the cool air under the hot dish in order to cool off and there is no cost if they are already in the drawer.
3. Do you get tons of return address labels free? Use them to label DVDs, CDs, and plastic containers that you may loan out of leave somewhere. People will always know who to return them to and you won't have to worry about how to get something to stick.
4. Do you have mismatched glasses or stemware? Do you have glasses that you never use? Turn the glass upside down and place pillar candles on the bases. They are even more neat if you group them together to make a free centerpiece or mantelpiece for holiday gatherings.
5. Do you have extra wallpaper from a project papering some walls or that you got when you moved into the house? They make great shelf liners to cover up worn shelves on bookcases or cupboards. It not only helps extend the life of what you are using, it helps add a little interesting color where their normally wouldn't be any.
6. Did you collect shells on your last million vacations? I took some memorable shells from a vacation to Florida with my husband and put them in a container by my bathtub. I get to see the shells every time I pass and remember the great memories of the vacation and I have a free decoration for my bathroom. Do you have any other collections that you could put on display in a glass jar or vase that you aren't using?
7. Have any broken plates or bowls? Save them and make a mosaic. There are tons of things that can be made into a mosaic like a tray, table or stepping stone for the garden. They make great additions around the house and outside. Different colors are usually the best to make a colorful arrangement but anything that has good memories is always a good addition.
8. Do you have any leftover tiles from putting in a floor or a tile wall? These can be used for little ones to paint on and you can seal the work and give it to relatives for great holiday gifts. Also, you can use transfer paper or stickers to make inspirational words and hang it up. The great thing is if you put it in the room that you are using the extras from, it is already color coordinated!
9. Do you have any decorative bowls or baskets? They are great to put inside the door to hold keys or on the end table to hold TV remotes. Often times, decorative bowls and baskets are something special that you got on a trip or that is a family collectible. Make sure you display and use all the things that are important to you. What would make you smile more then seeing it as soon as you came in the door.
10. Do you have glass containers that you have used like spaghetti sauce jars, maple syrup containers, or baby food jars? I saved a bunch of baby food jars to use to make special crafts with. My cousin came up with the idea of making a sugar scrub for a baby shower and she used my baby food jars. The larger jars are great for putting things in the pantry like rice, beans and other dry items. They are also great to keep leftovers in fridge. The other fun crafty item is to put a votive in it. If you want to dress it up, glue tissue paper and ribbons to go with your color scheme. Next time you think about recycling (or dare I say trashing) a nice glass jar, remember that you might find other uses for it...like a nice flower vase.
11. Do you have somewhere to store plastic bags? An old paper towel roll does the trick. You can fit tons of bags in the tube and put it in one of your cabinets. I have a neat fabric one from a craft fair that I got years back but if you haven't found the right craft fair, I highly suggest the paper towel method because it makes sure that you don't have plastic bags all over the kitchen. You can even hide some in the bathroom and other rooms that you need plastic bags with such an affordable holder :) I have also heard of using tissue boxes but my tissue boxes don't stand up to the wear a normal tissue box does so it doesn't have a long life after it's first use.
