Last week we ended up doing leftovers instead of pasta...is it a bad sign when I don't have enough energy to make pasta. We didn't have a ton of leftovers but we cleared out the fridge and I ran the dishwasher so that was a mission accomplished in my book. On Saturday we used our Cheesecake Factory gift card but we only got two meals so that we could save room for cheesecake and ended up spending $12 on the extras and tip so not a frugal trip but a tasty treat. We had dinner at a birthday party Saturday night. Sunday brought leftovers for lunch and that pasta dinner we didn't have the previous week. I didn't have a big plan for this week so I had to try to make it up on Sunday night and we are going to have company this week so trying to plan out something easy to make so we will see how that goes!
You guys sure love chicken! Are those not chicken tacos you'll be making? lol. Just kidding.
ReplyDeleteWow, not wanting to make pasta... you must have been extremely tired! For me it's not the pasta that's the problem, it's the protein. The kids would be happy with just having pasta but Greg always insist on having some kind of meat and then I strive (but not always succeed) to put some vegetable on the table too. But: he's been gone all week and I've barely cooked and only gone out to dinner once with a friend (the kids ate sandwiches, apparently) so I'm really enjoying that aspect of Greg not being here, lol. I'll cook more this week, though.
I had a few blanks spots in the menu and chicken is what my husband voted for. I said but we are having grilled chicken two nights in a row and he said that sounded great!!
DeleteI grilled up extra sausage and then cut them into small slices and put them in the freezer. I make pasta and dump the pasta into a container. I heat up olive oil, pesto and seasoning in the pan and add the frozen sausage. I heat it all up and add the pasta, toss with a little Parmesan cheese and dinner is serve with protein because my husband does get hungry later if there is not protein too :)
The veggies are always harder but we have had a lot of zucchini, salads and corn on the cob recently which normally get added on at the last minute because I don't write them into the menu as much because it is really whatever is fresh.
Way better to keep it simple while Greg is gone but you are going to be spoiled :) It is going to be hard to get back to cooking again!! Enjoy the cooking vacation.
