Menu Plan Monday 7/13
I did pretty well last week sticking to the plan. I did go a little overboard at the store but that was mostly because I had my son with me and he picked out two kinds of Pringles and two kinds of cookies so I put them in the cart instead of fighting it. It isn't like we aren't going to eat them so I went with the easy way. Justifying that, I used noodles at home instead of buying another bag of the noodles we are used to using in the dish. It was interesting to have the rigatoni noodles in the Philly Cheese steak pasta instead of egg or thinner noodles. It took a little longer to cook but it was super tasty!! My only meal that was a little off the mark was the salsa sloppy joe because there was only one container left in the freezer and it was actually french dip so we had those with chicken rice on Friday night instead.
This week I am hoping that we are getting a little more into the groove and can expand our meals to include a little prep but I am telling you that even with the meals prepped for the last few weeks, it has been hard to get dinner on the table before 7 pm because we aren't home!! The meals for the week are:
Tacos with saffron rice
Grilled Chicken with white rice
Chicken Nugget Wraps with homemade fries
Spaghetti with Pizza Bites
Breakfast for Dinner: Waffles
Quesadillas or Nachos (with leftover taco meat, grilled chicken and rice)
Leftovers
I am not sure that I this is exactly how the week is going to go but I am going to try and see if we can get these meals on the table because we are going to be going on vacation soon so I want to save our restaurant use for when we head to the beach.
We love Mexican at our house too. Always have tacos, nachos or similar on the menu.
ReplyDeleteWe have just come back from holidays. Good idea to 'save up' restaurant meals for holidays.
Love Mexican food here but have to make it at home because my tummy is not so fond of onions and peppers so it is harder to eat out because most Mexican food has those tasty veggies in it. I am hoping that I won't here from my son that he just wants food that I cook while on vacation but I am sure we are going to have start getting a house to rent in the coming vacations because eating out is not something our tummies can always take for a week :) I might try a little cooking in the hotel so we will see how it works!!
DeleteAlison! Are you all moved in to your new house now? Have you sold the old one? It doesn't sound like you're having much downtime... I hope you're not still splitting your days between the 2 houses.
ReplyDeleteI also agree that it's a great idea to save up some money on groceries for restaurant expenses during your vacation. Vacation is no fun if you have to cook all the time (well, in my opinion at least. I so enjoyed my 29 days when I didn't have to cook, although my mom was driving me crazy with always asking what we wanted to eat next. Just.give.me.some.food.and.don't.make.me.think.about.it.all.day.long. LOL.
I need to get back into the swing of things and make menus too. This week I've been taking it easy with doing old standards every day (I'm on autopilot). Then Greg and our son will be gone for a couple of weeks camping so I probably will just make a big batch of soup at the beginning of the week and eat that all week. The 2nd week my oldest son and his GF will be staying here and she's on Weight Watchers so I'll be dusting off my WW cookbooks. I'm actually looking forward to it :)
We are moved to the new house and crossing our fingers that the old house will close at the end of August so that we will be a one house family again! We need to get all our furniture because we are currently sleeping on a mattress on the floor and eating on a folding table.
